Spaghetti with Tomatoes, Prosciutto and Fresh Corn


Summer and tomatoes go hand in hand.  As do basil and corn on the cob.  During these warm and relaxing months, combining these ingredients in new ways is a joy. This pasta dish is a simple, healthy and delicious treat.  The salty prosciutto off-sets the sweet tomatoes and corn, while the basil lends an herbaceous edge that completes the dish.

Grilled Plum Pizza with Goat Cheese and Field Greens



What is more mortifying than to feel that you have missed the plum for want of courage to shake the tree?” – Logan Pearsall Smith (American Writer 1865 – 1946)

Well I decided to shake the tree this week and develop a recipe that is outside the box.  A plum pizza?  I made it and I’m so glad I did!  The juicy sweetness of the plum combined with tart goat cheese and tangy greens creates a symphony of flavors.

Cucumber Strawberry Cooler



A trip to my local farmer’s market inspired this incredibly refreshing and “summery” cocktail.  In Southern California, where I live, there are farmer’s markets all year long.  However, I especially look forward to the summer kirbie cucumbers that adorn each produce stand’s table.  The bright green tender skin encompasses the crunchy white, watery flesh that satisfies like a cold glass of water.  It only made sense to turn this vegetable into a fun summer drink.

Easy Ice Cream Cake with Raspberry Coulis



Nothing says summer like the iconic ice cream sandwich.  Fluffy vanilla ice cream sandwiched between two rectangular chocolate wafers, that slowly drips out and down your hand in the warm sun. 

There’s nothing fancy about this ice cream dessert.  The combination of flavors and textures marries perfectly.  As the velvety ice cream quickly melts upon entering your mouth, the chocolate wafer remains chewy and light.  One bite and I am transported back to childhood - racing to rip off the paper wrapper and sink my teeth into an all time favorite treat.
