This effervescent drink is truly refreshing and I love its beautiful ruby hue. The basic strawberry syrup can also be used for snow cones, pancakes and as a glorious topping for vanilla ice cream. The possibilities are endless and I really love the fact that this summer sweet is based on simple fresh fruit, a little sugar and a relatively small amount of your time.
Homemade Strawberry Soda
- 2 cups diced strawberries
- 1 cup sugar
- 1 cup water
- 1/4 cup fresh lime juice
- seltzer water
- In a medium saucepan combine strawberries, sugar and water. Heat mixture on medium high until it boils. Let boil for 2-3 minutes. Turn off heat and let sit.
- When slightly cooled, take an immersion blender and puree the strawberries in the pan.
- Pour the strawberry mixture through a sieve and gently press on the solids. Mix the lime juice into the strawberry syrup. Pour desired amount into a glass. Add ice and seltzer water. Garnish with fresh lime.
