20 Palate Pleasing Pumpkin Recipes

Instead of cooking for you this weekend, I decided to sit at my computer and do some pumpkin research.  I am busy with recipe testing for an outside source, so I felt it was the perfect time to share some of the these perfect pumpkin recipes and photos I have pinned over the last couple of months.  Pumpkin recipes are sweeping the internet at this time of year, and I truly believe these are unique and exceptionally beautiful.  Enjoy!

Savory Sweet Potato Casserole with Toasted Walnuts

I’m starting this blog post with a disclaimer – I really don’t like sweet potatoes that much (gasp!).  I know they are so wonderfully popular and can be used in so many wonderful ways, but I have never taken to them.  It could be due to a bad experience with a yam casserole when I was little (I’ll spare you the gory details).  I can do sweet potato fries on occasion with lots of salt to counteract the sweetness.  Oh yeah, and forget about the sweet potato/yam marshmallow casseroles – not happening in this house.

Chocolate Chai Tea Latte (Starbucks Version)

My daughter and I indulged in a little Sunday shopping yesterday.  I love shopping with Eva, who is now 13 years old.  She has a keen eye for fashion, great taste and can spot a deal like no other.  When I pick out something that is clearly not acceptable I get a simple ahh..no.  I have never returned an item that was Eva approved – love that girl!

I also love my 16 year old son Jake who discovered this awesome drink at Starbucks.  He was passing some time while getting his oil changed and stopped into to get a drink.  When I heard about this Chocolate Chai Tea Latte I almost burst at the seams.  Chocolatey, spicy, creamy, caffeine, steaming hot goodness in a pretty holiday Starbucks cup?!  I was so excited to get this drink on my next visit.

Double Stuffed Peanut Butter and Jelly Cookies

This Double Stuffed Peanut Butter and Jelly Cookie recipe could possibly be the most fun I’ve ever had in the kitchen - ever!  I had seen some stuffed cookies on other food blogs but really wanted to come up with one of my own.  Perusing the grocery aisle one day, I came across these shortbread strawberry jam cookies.  Well, why couldn’t I take this cookie and wrap around some velvety brown peanut butter cookie dough and make a super cookie?!  I did it and I’m so glad I did.

Pan Roasted Brussels Sprouts with Butternut Squash

These brussels sprouts with butternut squash are truly a vision and taste of fall.  Add some shallots and Gorganzola and your tummy will be very happy with this mix of distinct and savory flavors.

Ever since I realized that steaming brussels sprouts is not the best way to cook these little circular wonders, I’ve been obsessed.  I can truly say I love this green globe shaped veggie.  My favorite preparartion is shredded and sautéed with olive oil, red pepper flakes and kosher salt – easy peasy!  I also love them sliced in half and roasted with a litlle bit of balsamic.  Again, super simple and incredibly delicious.

Korean Tacos with Pulled Pork

Last week I posted this seriously delicious recipe for Roasted Pork Shoulder (Spiced Pork Roast).  I just loved the moist and stringy meat that literally fell straight off the bone in all it’s porky delightfulness.  So of course there were leftovers and what else would I make but some amazing Korean Tacos.  We are a big taco family.  There is never a time we don’t have cilantro or salsa in our home.  Our leftover meat almost always ends up in tacos (or sometimes noodles and fried rice).

Mini Pumpkin Chocolate Chip Muffins with Salted Caramel Cream Cheese Glaze

Pumpkin Fest continues!  These chocolate chip pumpkin muffins are delicious and moist on their own; add a salted caramel cream cheese glaze and your talking turkey!  In my never ending quest to create yummy and original breakfast items, I combined a whole lot things in my pantry and refrigerator to create these glorious, petite muffins.

Roasted Cauliflower with Bacon and Parmesan Cheese

I feel that cauliflower is one of the most versatile vegetable ingredients out there.  When I was researching this post I found some really cool recipes using cauliflower in the most unique ways.  I found a cauliflower pizza crust, cauliflower “cream sauce”, cauliflower couscous (you actually crumble the cauliflower to make a mock coucous) which is great for gluten free and paleo diets, and of course your basic roasted, pureed, mashed and steamed versions.

Spiced Pork Roast

I have to admit – I couldn’t stop taking pictures of this Spiced Pork Roast.  The late afternoon sun was glorious, the house smelled of roasted meat with an intermingling of spice and my mouth was watering with ideas of how many different recipes I could create with this simple roasted pork shoulder.  I eventually stopped taking pictures since my kids were begging me to serve the meat straight off the bone for their afternoon snack.
