Top Ten Salad Recipes on Pinterest

Virtually Homemade - Easy Sweet and Spicy Mexican Slaw

It’s one week until school starts and I have officially hit the proverbial wall! I have been hit with piles of back to school forms, volunteering requests, sports pick up and drop offs, etc. As well, I have been struggling with my new gluten and dairy free diet restrictions, as well as some other health issues that have come to light. Plus, it’s been a really warm summer in San Diego that keeps me from wanting to cook. A huge problem for a food blogger!

Thanks for letting me vent! I know things could be so much worse, but I have taken some steps to keep my remaining weeks of summer a little more Zen.  First of all, I’m am taking deep breaths on a regular basis. Relaxing hikes with my doggie each morning that are not too strenuous, work wonders. I have pledged to get a massage today or tomorrow.  As well, I have found an unbelievably relaxing restorative yoga class on line that is free (here’s the link). Finally, I am keeping it simple in the kitchen – lots of salads and dishes that have healthy quality ingredients without a lot of prep time.

In light of all this rambling (sorry and thanks for listening!), I have decided to share some of the most beautiful salads I have pinned on Pinterest. They are all from reputable bloggers who amaze me with their talent and creativity on a daily basis. Enjoy! (oh yeah - they are all gluten free, of course)
