Dark Chocolate Cherry Kuchen


The German word "Kuchen" is simply translated is cake.  This recipe produces a very thin and rich "kuchen".  With the addition of warm chocolate and juicy ripe cherries, this cake is quite decadent - in a very addictive way.  Serve this dessert warm, with a dollop of whipped cream to taste.  However, this dessert can stand alone and be just as satisfying.  Although Kuchen is simply a cake, these decadent additions produce a complex treat no one can refuse.

Time Saving Tip
Purchased whipped cream (preferably Redi Whip)

Dark Chocolate Cherry Kuchen
serves 6-8

1/2 cup butter
1/4 cup sugar
1 egg
1 tsp. vanilla
1 cup flour
1/2 tsp. baking powder
1/4 tsp. salt
2 cups pitted cherries, cut in half
3 oz. roughly cut dark chocolate
1 Tbsp. sugar

Pre-heat oven to 350 dgrees.  Grease 9" round non-stick cake pan.

In small bowl sift flour, baking powder and salt.  Put aside.
In a large bowl cream sugar and butter brought to room temperature.  Mix in egg and vanilla.  Slowly beat in flour mixture.
Spread dough evenly on bottom of the cake pan.  Evenly top with cherries, chocolate and 1 Tbsp. of sugar.
Bake for 35 - 40 minutes until lightly browned.  Let cool 10 minutes and invert cake pan on plate and then turn over.
Serve with whipped cream to taste.
