Steak Sliders with a Cilantro Jalapeno Vinaigrette


I love cilantro.  My family seems to as well…I must have a fresh bunch in the frig at all times, or there is hell to pay! Cilantro is the beautiful deep green leaves of a Coriander plant.  I add it to everything – homemade salsa, guacamole, pasta, salads, etc..   As well, it’s very inexpensive as fresh herbs go.  I never pay more than a dollar for a hearty bouquet at the store.


I recently created a cilantro vinaigrette, which took our passion one step further.  This chunky vinaigrette or sauce is extremely versatile and bursting with flavor.  I keep it in the "frig" and stir into rice, pasta, drizzled on meat or fresh vegetables.

Recently I created a sandwich with the tangy concoction.  I used grilled steak. However, it would be just as sumptuous with chicken or pork.  It’s also a great quick meal if you have left over meat from last night’s dinner.  With a couple short cut ingredients you can create a hearty Mexican style “slider” in just a few minutes.

Time Saving Tip:
Use prepared salsa and prewashed baby greens


Steak Sliders with Cilantro Jalapeno Vinaigrette
4 sandwiches
Ingredients:
2 lbs. Top Sirloin (or tri-tip) grilled or broiled medium rare – seasones with sea salt and cracked black pepper

Vinaigrette:
2 jalapenos (leave seeds in one jalapeno if you want some heat) roughly chopped
4 green onions , roughly chopped
1 clove garlic
1 Tbsp. red wine vinegar
2 Tbsp. canola oil
1 cup cilantro leaves
salt and pepper to taste

4 small sourdough or French rolls (lightly toasted)
4 slices of provolone
Mixed baby greens
Salsa Verde to taste (purchased from store – I recommend La Victoria)
Directions:
Slice steak thinly and layer over provolone on the rolls.
Combine Vinaigrette ingredients in a food processor and pulse until smooth.  Liberally drizzle vinaigrette over steak.  Top with salsa and fresh greens.
