Mixed Berry Champagne Cocktail




This 4th of July my family and I are going to be on a plane to New York City, my hometown, to visit family and friends.  Why do we travel on this patriotic day filled with barbecues, picnics at the beach and fireworks?  It’s cheap!  Air travel has become so expensive I’ve had to pull a few tricks out of my pocket to get clear across the country; without taking a red eye or draining my pocketbook. 



Therefore, I decided to celebrate the holiday with some special friends this past Saturday.  It was a gorgeous day in San Diego – about 78 degrees (very warm for a coastal town) and a perfect evening for a backyard dinner party.

I spent the afternoon cooking and developing a patriotic cocktail for guests.  I love Proseco anytime of the year – it’s fruity, bubbly and a bit lower in alcohol than your average sparkling wine.  For a little color I added a couple of small scoops of raspberry sorbet and blueberries to truly make it a red, white and blue drink.  For the kids, just switch out the Proseco for seltzer water.





Mixed Berry Champagne Cocktail

Ingredients
  • 1 bottle Proseco, Sparkling Wine or Champagne
  • 1 pint raspberry sorbet
  • Blueberries to taste
Cooking Directions
  1. In a cold champagne glass, scoop in two rounded teaspoons of sorbet. Sprinkle in blueberries. Pour Proseco over berry mixture. Pour slowly - the wine will bubble significantly. Once the bubbles have died down, pour in more Proseco until glass is full.
