Edamame Hummus


Preparing a brown bag lunch for my kids is always a challenge.  My son is relatively easy, accepting a turkey sandwich, fruit or vegetable and a power bar of some sort. My daughter is a bit picky, not quite liking sandwiches, with few alternatives to offer me.  So my thinking cap goes to work each week with the intention of creating a new lunch item she’ll love.



Hummus is a go to lunch item but it’s more acceptable if I’ve dolled it up.  With a container of prepared hummus, some edamame and fresh cilantro I blend up this unique version in hopes of tantalizing my daughter’s palate.  I got a “thumbs up” which made my week.  Pair it with Stacy’s Naked Pita Chips (the best baked chips out there!) and you have the basis for a noontime meal.

  2. I wish my mom was nice enough to make me homemade hummus for lunch!

    No but seriously, this looks great. I've never used edamame in my hummus before so this should be really interesting for me to make.
